Life.....And Mangoes

Hello, dear friends!  It's been two weeks since my last post and lots has happened since then. A beloved family member passed, others have become fragile in health, and life has directed my priorities lately.  Every day, I wish I could scream out to the world  to not sweat the small stuff, to love intensely, to follow your passion, and to live each day as it was your last.
On another note, my best friend, Juana came to visit from New Jersey.  We have been friends for thirty six years and would you believe we have never had an argument?  I enjoyed her stay immensely and hope to see each other soon.
It's mango season and I love it!  Mango is one of my favorite fruits, as a matter of fact, I am going to a mango festival tomorrow.  Some of my neighbors have mango trees and  I often have a bag of mangoes outside my door.  So, I'll shut up for now and show you my mango marmalade.    I love it with bagels!

This marmalade is very simple to make and only three ingredients are needed:

Mangoes

1 1/2 cup sugar

water


I used 12 ripe mangoes, which made approx. 4 cups of marmalade.
Peel and slice mangoes; discard seed.  In large dutch oven, place mango slices.  Add enough water to cover mangoes; add sugar, stir to mix well.  Cook in medium heat for approximately 30 minutes or until
mangoes are soft enough to part with a wooden spoon.  Let cool.  Pour contents in food processor, mix well.  Pour marmalade through a mesh strainer into a plastic or glass container and refrigerate.  Will keep well for 2 weeks, if it lasts that long.

Note: If making less quantity, use sugar to taste.
