The first time I made this pasta, I had company for dinner. Only a crazy gal like me dares to experiment in the kitchen when guests are expected for dinner. I accompanied this dish with grilled chicken breasts. The ambiance was very casual, just how I like it. Dinner was so good that I forgot what I made for dessert. The ingredients for this recipe are few and fresh. Anyone can make it. You can accompany this pasta with any protein or just serve as a delicious main dish.
Ingredients Yield: 8 Servings
5 large red tomatoes, pureed
1 medium onion, diced
4 garlic cloves, thinly diced
1/4 cup olive oil
5 fresh basil leaves, cut
1/2 cup white wine
Salt & Pepper to taste
16 ounces cooked pasta noodles ( I used fettucini)
Fresh parmesan
Fresh basil for garnish
In large pan, over medium heat, pour oil, cook onion and garlic until translucent. Add pureed tomatoes, basil, wine, salt and pepper. Cook sauce in low heat for thirty minutes, stirring occasionally. Meanwhile, boil pasta.
Add pasta noodles to sauce pan and gently incorporate.
Add freshly grated parmesan cheese and garnish with basil.
Enjoy with a good glass of wine and the best group of friends.
