A Pinch Of This And A Pinch Of That

It is very important to read a recipe more than once.  Many times  I've had to make an unexpected run to the market for not making sure that I had all the ingredients before starting.  I am sure it has happened to all of us at some point or another. But, experience and learning from our mistakes are the best teachers.  First, read a recipe and look at the ingredients, that way you will know if you will like the dish.  Second, read the directions at least twice so you understand, sometimes we think we know and we don't.  Third, make sure you have all the ingredients before starting. And when baking it is very important to bake in the correct mold, because if too small, the batter will overflow and you wont't be a happy camper.
My grandmother never used a measuring cup or spoon, not even for baking.  Everything was a pinch of this and pinch of that, but she made succulent dishes and desserts.  And I still have to remind my mom that an empty can of condensed milk is not a cup!
