Let Us Give Thanks



Hello, friends.
Let us give thanks even for what we want and do not have.  It's that time of the year when one should reflect, think, and value of how fortunate we are to have our family and friends.
Thanksgiving day is the holiday which I cook the most, from appetizers to various sides and desserts.  I usually start two days before, starting with some orders I might have.  Without further due, I shall tell you, Thanksgiving is my favorite holiday. Let's appreciate and be thankful every day and not only today.
I will also like to say I am very thankful for all of you, my readers!
Today I will like to share a recipe given to me years ago by a dear friend.  My friend recently had a health scare, but thankfully, all results are negative.  The recipe is Coca Cola Rice, yes, you read correctly.  This recipe is so easy, I don't even have it written down.

                                                       Coca Cola Rice


Ingredients:                                                    Yield: 4-6 Servings

4 ounces bacon, cut in 1/2 inch pieces

1 medium onion, diced

2 cups rice

2 cups Coca Cola

2 tablespoons raisins (optional)

2 tablespoons sliced almonds (optional)


Directions:

In  skillet, cook bacon and onion.  Bacon should be well cooked, but not to a crisp. Place bacon and onion  on a plate covered with paper towel. Place aside.
In medium dutch oven pan, pour Coca Cola; bring to a boil.  Reduce  heat to low; add rice, bacon, onion, raisins, and 2 tablespoons of bacon fat.  Cook with closed lid for about 20 minutes. Add almonds, fluff it up with a fork and voila!
Makes a great side dish.

Note: If you own a rice cooker, this is the time to use it.
