These Will Make You Smile

Biscuits and strawberry jam are one small reason to make you smile.  Once you try this strawberry jam, I assure you it will be difficult to return to the commercial one we all buy at the store.
These are extraordinarily good.  It makes a nice baked good gift.
                                                     

                                                              Strawberry Jam Biscuits


Strawberry Jam

3 cups ripe strawberries

1/4 cup sugar

1 teaspoon grated lime zest

2 tablespoons fresh lime juice



Biscuits

3/4 cup sugar

2 teaspoons baking powder

3/4 teaspoon salt

2 1/4 cups flour and more for handling

1 stick cold unsalted butter, cut into 1/2" pieces

1 teaspoon grated lime zest

3/4 cup buttermilk

1 egg, beaten

1 teaspoon raw sugar


To make the strawberry jam:  Cook strawberries and sugar in medium saucepan, over medium heat, stirring occasionally for about 12 minutes until jam like consistency.  Remove from heat; stir in lime juice and zest.  Let cool.   EASY & SO GOOD.  YOU'LL HAVE LEFTOVER JAM FOR TOMORROW'S TOAST!


To make biscuits:  Preheat oven to 400 degrees.  In large bowl, whisk sugar, baking powder, salt and the 2 1/4 cups flour.  Add butter and lime zest, blend with hands until coarse crumbs form.  Add buttermilk; use fork to combine.
Transfer to floured area (mixture will be thin, I used about 1/2 cup  flour to maneuver).  Gently  knead until a shaggy moist dough forms.

Roll out dough about 1/2 inch thick, cut with biscuit cutter the rounds, placing them on wax paper lined cookie sheet.  Repeat the rolling process until dough is finished.
Make an indentation in the middle of each biscuit (I made mine with  my fondant roller).  Brush with egg and sprinkle with raw sugar.  Spoon  strawberry jam into each divot.  Bake until golden brown, about 20 minutes.
